Blueberry Cornbread Muffins

Ingredients

  • 1 1/2 cup Kodiak Power Cakes Mix
  • 3/4 cups corn meal
  • 1/2 teaspoon baking powder
  • 1 Large whole egg
  • 1/4 cup Vanilla MuscleEgg egg whites
  • 3 tablespoons honey
  • 1/2 cup Sweet Leaf Stevia
  • 1 cup buttermilk
  • 1/2 cup blueberries

Directions

Step 1
Preheat oven to 350 degrees and coat a muffin pan with non stick spray (recipe makes 8 muffins).
Step 2
Combine all ingredients in a large bowl (EXCEPT for blueberries) and mix until smooth. Stir in blueberries.
Step 3
Pour batter into muffin pan and bake for 20-25 minutes until a toothpick comes out clean when poked through the center of one muffin.
Step 4
Let cool slightly and drizzle with extra honey if desired.
