Blueberry Lemon Poppy Seed Muffins

Ingredients

  • 1 box Kodiak Cakes Blueberry Lemon Muffin Mix
  • 1 cup milk of choice
  • 1/4 cup oil of choice
  • 2 Large whole eggs
  • 1 tablespoon poppy seeds
  • 1 cup blueberry preserves or jam (** TOPPING **)

Directions

Step 1
Preheat oven to 375 degrees and line a cupcake pan with paper liners or coat with non stick spray.
Step 2
Combine muffin ingredients into a large bowl and mix well until smooth. Divide and pour batter into prepare cupcake pan.
Step 3
Bake for 12-15 minutes until slightly golden brown and a toothpick comes out slightly moist when poked through the center. Let cool slightly.
Step 4
Add 1-2 tbsp of preserves on top and add fresh blueberries if desired.
