Ingredients

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 ripe bananas
  • 2 tablespoons avocado oil
  • 4 Large eggs
  • 1/2 cup unsweetened milk of choice
  • 1/4 cup honey
  • 1 heaped teaspoon vanilla extract
  • 1/2 cup chopped walnuts
  • 3 tablespoons almond flour (TOPPING)
  • 1/4 cup coconut sugar (TOPPING)
  • 1/4 teaspoon cinnamon (TOPPING)
  • 1 tablespoon softened butter (TOPPING)

Directions

Step 1
Preheat oven to 350 degrees and line a cupcake tin with liners or coat with non stick spray. Add dry ingredients (1 cup almond flour, coconut flour, salt, baking powder, and baking soda) to a small bowl and whisk to combine.
Step 2
Add eggs to large bowl or stand mixer and beat on medium speed for 2-3 minutes until light and fluffy. Add mashed banana, milk, oil, vanilla extract, and honey .
Step 3
With the mixer on low speed, slowly add dry ingredients to wet ingredients. Mix just until combined. Stir in chopped walnuts.
Step 4
Divide and pour batter into prepared pan. In a small bowl mix 1 tablespoons of butter, 2 tablespoons of almond flour, coconut sugar, and cinnamon. Mix until topping is well combined. Sprinkle onto the tops of each muffin.
Step 5
Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
