Chewy Snickerdoodle Cookies

Ingredients
- 1 cup butter (room temperature)
- 1 1/4 cup coconut sugar
- 1/4 cup 'vanilla' MuscleEgg egg whites
- 1 1/2 teaspoon vanilla extract
- 3 cups Kodiak Power Cakes
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup sugar
- 1 1/2 teaspoon cinnamon
Directions
Step 1

| Preheat oven to 350 degress F and line a cookie sheet with parchment paper or non stick spray. |
Step 2

| In a large bowl whisk together Kodiak mix, baking powder, and salt. Set aside. |
Step 3

| Using a stand or hand mixer, cream butter and sugar together until light and fluffy. Beat in egg and vanilla extract until well combined. Slowly add in the flour mixture. Dough should come together into a ball. If too sticky, add an extra tablespoon of Kodiak. If dough is too dry, add a tablespoon of water or milk. |
Step 4

| In a separate small bowl, combine sugar and cinnamon. Form cookies into a ball and roll each in the sugar/cinnamon mixture. Place on baking sheet. |
Step 5

| Bake 10-12 minutes just until centers are set. |
