Cinnamon Orange Protein Rolls

- 1 1/2 cup Kodiak Power Cakes Mix (** DOUGH **)
                                   
                                    
- 1 scoop PEScience SnickerDoodle Protein (** DOUGH **)
                                   
                                    
- 2 tablespoons coconut sugar (** DOUGH **)
                                   
                                    
- 2 tablespoons baking powder (** DOUGH **)
                                   
                                    
- 1 teaspoon salt (** DOUGH **)
                                   
                                    
- 3 tablespoons coconut oil (** DOUGH **)
                                   
                                    
- 1/4 cup 'Vanilla' MuscleEgg (** DOUGH **)
                                   
                                    
- 1/2 cup milk of choice (** DOUGH **)
                                   
                                    
- 1/4 cup orange juice (** DOUGH **)
                                   
                                    
- 1 tablespoon orange zest (** DOUGH **)
                                   
                                    
- 4 tablespoons softened butter (** FILLING **)
                                   
                                    
- 1 cup coconut sugar (** FILLING **)
                                   
                                    
- 3 tablespoons cinnamon (** FILLING **)
                                   
                                    
- 1/2 scoop PEScience SnickerDoodle Protein (** GLAZE **)
                                   
                                    
- 4 tablespoons fat free cream cheese (** GLAZE **)
                                   
                                    
- 3 tablespoons orange juice (** GLAZE **)

                Step 1

                   |                 Preheat oven to 400 degrees and coat a mini muffin pan with non stick spray. |

                   |                 Prepare filling by adding butter, coconut sugar, and cinnamon to a small bowl until crumbly.  Set aside. |

                   |                 Prepare dough by adding all dough ingredients to a stand mixer fitted with a dough hook.  Pour dough out onto a lightly floured surface.  Roll into a large rectangle approximately 1/4" thick.  Spread filling onto dough leaving a 1/2" border around the edges.  Carefully roll dough into a log.  Slice into 24 rolls and place each in prepared muffin tin.  Bake 10-12 minutes until golden brown. |

                   |                 While rolls are baking prepare glaze by adding protein, orange juice, and cream cheese to a small bowl.  Whisk until smooth.  Spread or drizzle onto hot rolls. |
