Cookies & Cream Pumpkin Cookies

Ingredients

  • 1 cup Kodiak Cakes "Power Cakes" baking mix
  • 2 tablespoons coconut flour
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 3/4 cups quick oats
  • 1/2 cup butter (softened)
  • 1/2 cup stevia or sweetener of choice
  • 3 tablespoons sugar free maple syrup
  • 1 Large whole egg
  • 1 teaspoon vanilla extract
  • 1/2 cup canned pumpkin
  • 1 Detour "Cookies & Cream" Lean Muscle Bar ((chopped into small pieces))

Directions

Step 1
Preheat oven to 350 degrees F and line two baking sheets with parchment paper.
Step 2
Add all dry ingredients to a medium sized bowl. Stir well.
Step 3
Add butter and stevia/sweetener to a stand mixer or large bowl. Beat on high until light and fluffy. Add in vanilla, pumpkin, and syrup. Mix well.
Step 4
Slowly add dry ingredients to wet ingredients in three separate batches, stirring after each addition. Mix until just combined. Stir in chopped Detour bar pieces.
Step 5
Portion and divide dough onto cookie sheets. Bake for 12-15 minutes. Remove from oven and let cool.
