Ingredients
- 1 cup Kodiak Cakes "Power Cakes" baking mix
- 2 tablespoons coconut flour
- 1 teaspoon baking soda
- 2 teaspoons cinnamon
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
- 3/4 cups quick oats
- 1/2 cup butter (softened)
- 1/2 cup stevia or sweetener of choice
- 3 tablespoons sugar free maple syrup
- 1 Large whole egg
- 1 teaspoon vanilla extract
- 1/2 cup canned pumpkin
- 1 Detour "Cookies & Cream" Lean Muscle Bar ((chopped into small pieces))
Directions

Preheat oven to 350 degrees F and line two baking sheets with parchment paper. | |

Add all dry ingredients to a medium sized bowl. Stir well. | |

Add butter and stevia/sweetener to a stand mixer or large bowl. Beat on high until light and fluffy. Add in vanilla, pumpkin, and syrup. Mix well. | |
Step 4 | |
Slowly add dry ingredients to wet ingredients in three separate batches, stirring after each addition. Mix until just combined. Stir in chopped Detour bar pieces. | |
Step 5 | |
Portion and divide dough onto cookie sheets. Bake for 12-15 minutes. Remove from oven and let cool. |
