Dark Chocolate Low Carb Mocha Pancakes

Ingredients

  • 1/4 cup coconut flour
  • 2 heaped tablespoons dark cacao powder
  • 1 tablespoon Swerve, golden Lakanto, or keto friendly sweetener of choicee ve
  • pinch salt
  • 1 teaspoon baking powder
  • 3 Large egg whites
  • 1/3 cup brewed espresso
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons unsweetened milk of choice

Directions

Step 1
Add egg whites to a large bowl or stand mixer. Whisk on high for 1-2 minutes until stiff peaks form.
Step 2
Add coconut flour, cacao powder, baking powder, salt, and sweetener into a small bowl. Whisk until combined.
Step 3
Slowly add dry ingredients to egg whites. Pour in coffee and mix just until combined.
Step 4
Preheat skillet and coat with butter or coconut oil. Cook pancakes 1-2 minutes per side until light, fluffy, and cooked throughout.
