DECEMBER- Caramelized Onion and Spinach Holiday Fritattas

Ingredients

  • 2 tablespoons butter
  • 1 Large yellow onion (thinly sliced)
  • 1 1/2 cup plain/organic MuscleEgg egg whites
  • 6 whole eggs
  • 2 handfuls spinach
  • 3/4 teaspoons salt
  • 1/2 teaspoon pepper
  • 1 tablespoon coconut flour
  • 1 Small red bell pepper
  • 1/2 cup milk of choice

Directions

Step 1
Melt butter in a large saute pan set to medium-low heat. Add sliced onions, 1/4 teaspoon of salt, and a pinch of pepper. Cook onions for 15-20 minutes until caramelized. Add 2-3 tablespoons of water every few minutes to prevent burning. Remove from heat and let cool completely.
Step 2
Preheat oven to 375 and line the bottom of large sheet pan with parchment paper. Coat sides with non stick spray. Sprinkle sheet pan with cooked onions.
Step 3
Add eggs, egg yolks, remaining salt, pepper, coconut flour, and spinach to a high speed blender. Mix on high until combined. Pour mixture over onions.
Step 4
Bake for 22-24 minutes until eggs are set in the middle.
