Jalapeno Cheddar Bacon Cornbread Skillet

Ingredients

  • 1 box Kodiak "Cornbread" Mix
  • 1 cup cheddar cheese (shredded)
  • 1/2 cup plain/organic Muscle Egg egg whites
  • 3 tablespoons oil or melted butter
  • 1 3/4 cup milk of choice
  • 1 Small jalapeno (finally chopped)
  • 4 thick slices bacon (reserve fat)

Directions

Step 1
Preheat oven to 350 degrees and add bacon to a large cast iron skillet set under medium heat. Cook bacon until crisp. Remove from pan, crumble, and reserve fat from pan, let cool slightly.
Step 2
In a large bowl or stand mixer, combine cornbread mix, egg whites, milk, and reserved bacon grease. Mix well until smooth. Stir in cheddar cheese, chopped jalapeño, and bacon crumbles.
Step 3
Pour mixture into cast iron skillet and bake for 30-35 minutes until top is golden brown. Add on additional bacon crumbles, cheddar, cheese, and jalapeño if desired.
