Gluten Free Pumpkin Chocolate Chip Cookies
Ingredients
- .5 cup coconut oil
- 1 cup canned pumpkin
- .5 cup coconut sugar
- .25 cup baking stevia
- 1.5 teaspoons vanilla extract
- .25 cup Pumpkin Spice MuscleEgg
- .5 teaspoon baking powder
- .5 teaspoon baking soda
- 2 teaspoons cinnamon
- .5 teaspoon salt
- 2 cups gluten free Kodiak mix
- 1 cup Enjoy Life chocolate chips
Directions
Step 1 | |
Preheat oven to 350 degrees and line 2 sheet pans with parchment paper. | |
Step 2 | |
Add all ingredients (except chocolate chips) into a stand mixer or large bowl. Beat until smooth. Stir in chocolate chips. | |
Step 3 | |
Divide and portion dough onto cookie sheets. Bake 10-12 minutes. |
