| Place 1/2 cup of water, stevia, and gelatin in the bowl of a stand mixer. Begin to stir gently. Turn on to high speed and SLOWLY drizzle in remaining 1/2 cup of water, vanilla and pinch of salt. . Continue mixing on high until mixture becomes fluffy. Adjust sweetness to desired taste. |

| Line a small dish with parchment paper and add mixture. Flatten as much as possible. Cover and set in fridge for an hour. |

| For topping, melt chocolate and coconut oil in the microwave in 20 second increments until smooth. Drizzle on marshmallows and sprinkle on chopped peanuts. Cut and enjoy! |
