Honey Lemon Muffins

Ingredients

  • 1 1/4 cup Kodiak Power Cakes
  • 2 tablespoons coconut flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 tablespoons softened butter
  • 1/4 cup baking stevia or sweetener of choice
  • 3 tablespoons chocolate MuscleEgg egg whites
  • 1/2 cup honey (+ 2 tbsp for topping)
  • 1/2 teaspoon vanilla extract
  • 3/4 cups milk of choice
  • 1/4 cup 0% Greek yogurt (+ 1 tbsp for topping)
  • 2 teaspoons lemon zest
  • 3 tablespoons lemon juice (+ 2 tbsp for topping)

Directions

Step 1
Preheat oven to 375 and coat a muffin pan with non stick spray or cupcake liners.
Step 2
Add dry ingredients to a small bowl (Kodiak, coconut flour, baking powder, salt). In a large bowl or stand mixer, whip butter, honey, and stevia at medium speed until light and fluffy. Add lemon zest, juice, vanilla, milk, and Greek yogurt. Mix on high for 30 seconds. Slowly add in dry ingredients and mix until smooth.
Step 3
Divide and pour batter into prepare pan. Bake for 18-20 minutes until a toothpick comes out clean when pierced through the center. Prepare drizzle while muffins cool.
Step 4
Add 1/2 scoop of PEScience 'Gourmet Vanilla' protein, 1 tbsp of Greek yogurt, 2 tbsp lemon juice and 2 tbsp of honey to a small bowl. Mix until smooth. Drizzle mixture over the tops of the muffins. OR you can replace protein powder with powdered sugar. Add extra honey if desired.
