Ingredients
- 1 tablespoon olive oil
- 1 Small onion
- 2 cloves garlic (finely chopped)
- 1lb ground sausage
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 Large zucchini (sliced)
- 3 stalks celery (cut into 2" pieces)
- 1/3 cup baby carrots
- 1 tablespoon Italian seasoning blend
- 2 tablespoons tomato paste
- 18oz crushed tomatoes
- 3 cups chicken broth

| Turn Instant Pot on and press SAUTE function + 10 minutes. Add olive oil to pot with onions and garlic. Cook for 1 minute. | |

| Add ground sausage, salt, and pepper to pot. Crumble and brown sausage. Stir in remaining vegetables, tomato paste, Italian seasoning mix, crushed tomatoes, and stock. Stir well to combine. | |

| Turn OFF Instant Pot, then turn it back on and press MANUAL +20 minutes. When time is up, release pressure manually. Re-season to taste. | |
