January Cappuccino Protein Muffins

Ingredients

  • 1 cup almond flour
  • 1 scoop vanilla protein powder
  • 1 teaspoon baking powder
  • 1/4 cup greek yogurt
  • 1/4 cup milk of choice
  • 1/4 cup 'mocha' MuscleEgg egg whites
  • 2 teaspoons vanilla extract
  • 3 tablespoons freshly brewed and cooled espresso
  • 2 tablespoons stevia or sweetener of choice

Directions

Step 1
Preheat oven to 350 degrees and line a cupcake pan (12) with parchment liners.
Step 2
Add all ingredients to a large bowl or stand mixer. Beat on high until smooth. Adjust sweetness if needed.
Step 3
Fill prepared cupcake pan with batter to 3/4" full. Bake for 12-15 minutes or until a toothpick comes out clean when poked through the center of each muffin.
