Ingredients
- 1 cup almond flour
- 1 scoop vanilla protein powder
- 1 teaspoon baking powder
- 1/4 cup greek yogurt
- 1/4 cup milk of choice
- 1/4 cup 'mocha' MuscleEgg egg whites
- 2 teaspoons vanilla extract
- 3 tablespoons freshly brewed and cooled espresso
- 2 tablespoons stevia or sweetener of choice
Directions

| Preheat oven to 350 degrees and line a cupcake pan (12) with parchment liners. | |

| Add all ingredients to a large bowl or stand mixer. Beat on high until smooth. Adjust sweetness if needed. | |

| Fill prepared cupcake pan with batter to 3/4" full. Bake for 12-15 minutes or until a toothpick comes out clean when poked through the center of each muffin. | |
