Ingredients
- 1/2 cup softened butter
- 1/2 cup baking stevia or sweetener of choice
- 2 Large whole eggs
- 1 box Kodiak Cakes 'Bear Country Cookie Mix'
- 1 cup rolled oats
- 1 cup butterscotch chips

| Preheat oven to 350 degrees F and line 2 baking sheets with parchment paper. | |

| Combine Kodiak mix and oats in a large bowl. Stir well. | |

| Add butter and stevia to the bowl of a stand mixer. Beat on high until light and fluffy. Add eggs. Slowly add dry mixture to wet mixture. Stir in butterscotch chips. | |

| Divide and portion onto baking sheets. Bake for 8-10 minutes until soft in the center and golden brown on the edges. | |
