JULY- Oatmeal Butterscotch Cookies

Ingredients

  • 1/2 cup softened butter
  • 1/2 cup baking stevia or sweetener of choice
  • 2 Large whole eggs
  • 1 box Kodiak Cakes 'Bear Country Cookie Mix'
  • 1 cup rolled oats
  • 1 cup butterscotch chips

Directions

Step 1
Preheat oven to 350 degrees F and line 2 baking sheets with parchment paper.
Step 2
Combine Kodiak mix and oats in a large bowl. Stir well.
Step 3
Add butter and stevia to the bowl of a stand mixer. Beat on high until light and fluffy. Add eggs. Slowly add dry mixture to wet mixture. Stir in butterscotch chips.
Step 4
Divide and portion onto baking sheets. Bake for 8-10 minutes until soft in the center and golden brown on the edges.
