Step 1

| Preheat oven to 300 degrees F and line a baking sheet with parchment paper or a silpat. |

| In a medium sized bowl, combine flour, baking soda, salt, and cacao powder. Set aside. |

| Add egg whites and vanilla extract to a large bowl or stand mixer. Beat on high until light and fluffy. Drizzle in oil and slowly add dry ingredients until smooth. |

| Pour batter onto prepare baking sheet and spread into one even layer OR portion and divide into small cookies. Bake for 25 minutes. Cookies may still be soft, but will harden as they cool. |
