Step 1

| In a medium bowl, whisk together egg whites and 1 tablespoon water. Add salt and pepper. |

| Heat oil over medium-high in a non stick skillet. Add spinach. Cook for 30 seconds until wilted. Add egg whites and cook until nearly set. Pull sides of omelet toward center as uncooked egg whites run underneath with a spatula, 1 to 2 minutes. |

| Add cottage cheese on top of omelet, sprinkle with Parmesan cheese, and re-season with salt and pepper if needed. Slide omelet onto a serving plate and gently fold it over on itself by tipping skillet slightly. |
