Step 1

| Coat a small pan with non stick spray or butter. Heat under low-medium fire. Gentle beat egg whites and egg in a bowl, set aside. |

Step 2

| Add mushrooms, onions and peppers to pan. Sprinkle with salt and pepper. Sauté until vegetables are tender. Add more cooking spray or butter to pan. Pour in egg/egg whites. Scramble until desired doneness. Remove from heat. |

| Add eggs to 1/2 of tortilla and sprinkle with cheese. Fold. Return to pan and let brown on each side for 30-45 seconds. Top with salsa, avocado, and sour cream if desired. |
