Kodiak Maple Bacon Donuts

Ingredients

  • 6 thick slices bacon (cooked, reserve fat)
  • 2 cups Kodiak Cakes All Purpose Baking Mix
  • 1/4 cup stevia or 5 tbsp of sugar
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 3/4 cups buttermilk
  • 2 Large eggs
  • 2 tablespoons butter or ghee (melted)
  • 2 cups powdered stevia or powdered sugar (** GLAZE **)
  • 2-3 tablespoons water (** GLAZE **)
  • 1 teaspoon maple extract (** GLAZE **)

Directions

Step 1
Preheat oven to 350 degrees and line a donut pan (12) with non stick spray or butter.
Step 2
Combine donut ingredients and reserved bacon grease in a large bowl or stand mixer. Mix well until smooth. Pour into pan. Bake for 10-12 minutes until golden brown.
Step 3
Remove from oven and transfer to a wire rack. Let cool.
Step 4
Prepare glaze by adding powdered stevia/sugar, maple extract, and water (add slowly to desired consistency). Pour onto each donut and top with crumbled bacon.
