Lemon Chia Seed PRETTY FIT Muffins

Ingredients

  • 1 1/4 cup Kodiak Power Cakes
  • 1 tablespoon coconut flour
  • 1 scoop Pretty Fit 'Vanilla' whey protein
  • 1 tablespoon chia seeds
  • 1 Large lemon (zested and juiced)
  • 1 teaspoon baking powder
  • 1/4 cup egg whites
  • 2 tablespoons 0% Greek yogurt
  • 3/4 teaspoons lemon extract
  • 1/2 teaspoon vanilla extract
  • 4 tablespoons honey

Directions

Step 1
Preheat oven to 350 degrees and coat a muffin pan with non stick spray.
Step 2
In a large bowl, combine all ingredients and mix until batter is smooth. Divide and pour batter into prepared pan. Bake for 20-22 minutes until edges are slightly golden brown and middles bounce back to touch.
Step 3
Remove from oven and let cool.
