Ingredients
- 1 cup spinach
- 1 cup MuscleEgg egg whites
- 1/4 teaspoon salt
- pinch pepper
- 5 cherry tomatoes
- 1/4 cup low fat cheddar cheese
- 1 low carb tortilla
Directions

| Heat a small pan under low-medium fire. Coat with non stick spray. Add chopped spinach and saute for 1-2 minutes. | |

| Pour in egg whites, add salt and pepper. Cook on low heat. | |

| Assemble quesadilla by adding egg whites, cheese, and tomatoes to one side of a tortilla. Fold and cook on each side until golden brown. | |
