Mint Brownie Ice Cream Sundaes
Ingredients
- 1 box Kodiak Cakes 'Big Bear Brownies'
- 1/2 cup unsweetened apple sauce
- 2 tablespoons coconut oil or canola oil
- 1/2 cup 'Mint Brownie' MuscleEgg egg whites
- 1/4 teaspoon mint extract
- 3-4 heaped tablespoons Andes mint baking pieces
Directions
Step 1 | |
Preheat oven to 350 degrees and coat a whoopie pie pan with nonstick spray (you could also use a mini muffin or regular muffin pan). | |

In a large bowl, combine all ingredients except for Andes mint pieces. Mix until well combine and batter is smooth. Divide and pour batter into pan. Sprinkle Andes mint pieces on top. | |
Step 3 | |
Bake for 8-10 minutes for whoopee pie pan (10-12 for mini muffin pan, 15-20 minutes for regular muffin pan). | |
Step 4 | |
Serve warm with ice cream, whipped cream, and additional chopped Andes mint pieces. |
