Mint Brownie Ice Cream Sundaes

Ingredients

  • 1 box Kodiak Cakes 'Big Bear Brownies'
  • 1/2 cup unsweetened apple sauce
  • 2 tablespoons coconut oil or canola oil
  • 1/2 cup 'Mint Brownie' MuscleEgg egg whites
  • 1/4 teaspoon mint extract
  • 3-4 heaped tablespoons Andes mint baking pieces

Directions

Step 1
Preheat oven to 350 degrees and coat a whoopie pie pan with nonstick spray (you could also use a mini muffin or regular muffin pan).
Step 2
In a large bowl, combine all ingredients except for Andes mint pieces. Mix until well combine and batter is smooth. Divide and pour batter into pan. Sprinkle Andes mint pieces on top.
Step 3
Bake for 8-10 minutes for whoopee pie pan (10-12 for mini muffin pan, 15-20 minutes for regular muffin pan).
Step 4
Serve warm with ice cream, whipped cream, and additional chopped Andes mint pieces.
