Mint Chip Cookies
Ingredients
- 1 cup gluten free Kodiak Cakes mix
- 2 tablespoons coconut flour
- 1 teaspoon baking powder
- 3 tablespoons Swerve or sweetener of choice
- 1/4 cup cacao powder
- 1 Large whole egg
- 1/4 cup Mint Brownie MuscleEgg
- 3 drops peppermint essential oil
- 2 tablespoons melted butter or coconut oil
- 3/4 cups milk of choice
- 3 tablespoons Enjoy Life mini chocolate chips (** TOPPING **)
- 1 teaspoon coconut oil (** TOPPING **)
- 1 drop peppermint essential oil (** TOPPING **)
Directions
Step 1 | |
Add all ingredients (EXCEPT TOPPING) into a large bowl or stand mixer. Mix on high until well combined. Refrigerate for 10-15 minutes | |
Step 2 | |
Preheat oven to 350 degrees and line a cookie sheet with parchment paper or non stick spray. | |
Step 3 | |
Portion and scoop dough onto cookie sheet. Bake for 10-12 minutes. Remove from oven and let cool completely. | |
Step 4 | |
Prepare topping by combining chocolate and coconut oil in a small bowl. Microwave in 15 second increments (stirring in between) until completely smooth. Stir in peppermint oil. Drizzle topping on cookies. Let set for 5 minutes. |
