Mint Chip Cookies

Ingredients

  • 1 cup gluten free Kodiak Cakes mix
  • 2 tablespoons coconut flour
  • 1 teaspoon baking powder
  • 3 tablespoons Swerve or sweetener of choice
  • 1/4 cup cacao powder
  • 1 Large whole egg
  • 1/4 cup Mint Brownie MuscleEgg
  • 3 drops peppermint essential oil
  • 2 tablespoons melted butter or coconut oil
  • 3/4 cups milk of choice
  • 3 tablespoons Enjoy Life mini chocolate chips (** TOPPING **)
  • 1 teaspoon coconut oil (** TOPPING **)
  • 1 drop peppermint essential oil (** TOPPING **)

Directions

Step 1
Add all ingredients (EXCEPT TOPPING) into a large bowl or stand mixer. Mix on high until well combined. Refrigerate for 10-15 minutes
Step 2
Preheat oven to 350 degrees and line a cookie sheet with parchment paper or non stick spray.
Step 3
Portion and scoop dough onto cookie sheet. Bake for 10-12 minutes. Remove from oven and let cool completely.
Step 4
Prepare topping by combining chocolate and coconut oil in a small bowl. Microwave in 15 second increments (stirring in between) until completely smooth. Stir in peppermint oil. Drizzle topping on cookies. Let set for 5 minutes.
