Paleo Pear & Fig Cinnamon Cupcakes

Ingredients
- 1 3/4 cup cassava flour
- 2 tablespoons coconut flour
- 2 teaspoons baking soda
- 1/2 cup coconut sugar
- 1 tablespoon cinnamon
- 1 Large whole egg
- 1/4 cup 'Pumpkin Spice' MuscleEgg
- 3 tablespoons melted ghee
- 3 tablespoons unsweetened applesauce
- 2 teaspoons vanilla extract
- 2/3 cups milk of choice
- 2 Medium pears (roughly chopped) (* TOPPING *)
- 6 dried figs (roughly chopped) (* TOPPING *)
- 1 tablespoon ghee (* TOPPING *)
- 1 teaspoon cinnamon (* TOPPING *)
- 2 tablespoons maple syrup (* TOPPING *)
Directions
Step 1

| Preheat oven to 350 degrees and coat a cupcake pan with non stick spray or use paper liners. |
Step 2

| In a large bowl or stand mixer, combine all ingredients EXCEPT topping items. Mix on medium speed for 1 minutes until smooth. Divide and portion into prepared cupcake pan. |
Step 3

| Bake for 18-20 minutes until a toothpick comes out clean when poked through the center of the cupcake. Remove from oven and prepare topping. |
Step 4
|
| Combine topping ingredients in a small saucepan. Salute for 5-7 minutes until mixture is thick and pears are softened. Top cupcakes and add chopped walnuts if desired. |
