Paleo Pear & Fig Cinnamon Cupcakes

Ingredients

  • 1 3/4 cup cassava flour
  • 2 tablespoons coconut flour
  • 2 teaspoons baking soda
  • 1/2 cup coconut sugar
  • 1 tablespoon cinnamon
  • 1 Large whole egg
  • 1/4 cup 'Pumpkin Spice' MuscleEgg
  • 3 tablespoons melted ghee
  • 3 tablespoons unsweetened applesauce
  • 2 teaspoons vanilla extract
  • 2/3 cups milk of choice
  • 2 Medium pears (roughly chopped) (* TOPPING *)
  • 6 dried figs (roughly chopped) (* TOPPING *)
  • 1 tablespoon ghee (* TOPPING *)
  • 1 teaspoon cinnamon (* TOPPING *)
  • 2 tablespoons maple syrup (* TOPPING *)

Directions

Step 1
Preheat oven to 350 degrees and coat a cupcake pan with non stick spray or use paper liners.
Step 2
In a large bowl or stand mixer, combine all ingredients EXCEPT topping items. Mix on medium speed for 1 minutes until smooth. Divide and portion into prepared cupcake pan.
Step 3
Bake for 18-20 minutes until a toothpick comes out clean when poked through the center of the cupcake. Remove from oven and prepare topping.
Step 4
Combine topping ingredients in a small saucepan. Salute for 5-7 minutes until mixture is thick and pears are softened. Top cupcakes and add chopped walnuts if desired.
