Ingredients
- 1/2 cup liquid egg whites
- 1 Large whole eggs
- 10 drops liquid stevia
- 2 tablespoons PB2 (powdered peanut butter)
- 2 tablespoons jelly of choice
- 2 tablespoons peanut butter
Directions

Combine egg whites, whole egg, stevia, and powdered peanut butter in a blender or large bowl. Mix well. | |

Preheat a 8" skillet and coat with non stick spray under medium-low heat. Pour batter onto pan and cover. Cook for 2-3 minutes on first side (all liquid on top should be mostly set), flip and cook an additional 1-2 minutes. Remove from heat. | |

Spread a layer of jelly and peanut butter across the pancake, roll, and serve with fresh strawberries. |
