Ingredients

  • 1 1/2 cup Kodiak Cakes 'all purpose baking mix'
  • 1/2 cup butter
  • 1/2 cup coconut sugar, stevia, or sweetener of choice
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract
  • 2 Large whole eggs
  • 10oz frozen peaches
  • 1-2 tablespoon honey
  • 1 tablespoon fresh thyme

Directions

Step 1
Preheat the oven to 350 degrees F and lightly grease a shortcake pan or 10 spaces on a muffin tin.
Step 2
Cream the butter and sugar in a stand mixer or large bowl. Beating well until the mixture is light and slightly fluffy. Add the buttermilk, eggs and vanilla and mix well. Add Kodiak mix slowly.
Step 3
Divide and portion into pan. Bake for 15-17 minutes until the cake springs back and a toothpick inserted in the center comes out clean.
Step 4
While cakes are baking add peaches, honey, fresh thyme, and a small pinch of salt into a small pot. Heat over low-medium fire until mixture begins to bubble. Reduce heat and simmer for 2-3 minutes. Adjust sweetness if desired.
Step 5
Serve cakes warm with peach mixture and whipped cream if desired.
