Step 1

| Preheat the oven to 350 degrees F and lightly grease a shortcake pan or 10 spaces on a muffin tin. |

| Cream the butter and sugar in a stand mixer or large bowl. Beating well until the mixture is light and slightly fluffy. Add the buttermilk, eggs and vanilla and mix well. Add Kodiak mix slowly. |

| Divide and portion into pan. Bake for 15-17 minutes until the cake springs back and a toothpick inserted in the center comes out clean. |

| While cakes are baking add peaches, honey, fresh thyme, and a small pinch of salt into a small pot. Heat over low-medium fire until mixture begins to bubble. Reduce heat and simmer for 2-3 minutes. Adjust sweetness if desired. |

| Serve cakes warm with peach mixture and whipped cream if desired. |
