Ingredients
- 2lb beef chuck roast (trimmed and cut into 1-2" chunks)
- 1 tablespoon butter (melted)
- 1 Medium onion (thinly sliced)
- 2 stalks celery (sliced)
- 1 cup baby carrots
- 3 tablespoons tomato paste
- 2 teaspoons salt
- 1 cup bone broth
- 1/2 teaspoon pepper
- 1/4 cup fresh parsley (roughly chopped)
Optional
- 1/4 teaspoon xanthan gum

| Add all ingredients (except beef) to your Instant Pot. Stir well until smooth and well combined. Add beef. Return lid, close valve. Turn Instant Pot ON and press STEW/MEAT + 35 minutes. | |
