Ingredients
- 2lb beef chuck roast (trimmed and cut into 1-2" chunks)
- 1 tablespoon butter (melted)
- 1 Medium onion (thinly sliced)
- 2 stalks celery (sliced)
- 1 cup baby carrots
- 3 tablespoons tomato paste
- 2 teaspoons salt
- 1 cup bone broth
- 1/2 teaspoon pepper
- 1/4 cup fresh parsley (roughly chopped)
Optional
- 1/4 teaspoon xanthan gum

Add all ingredients (except beef) to your Instant Pot. Stir well until smooth and well combined. Add beef. Return lid, close valve. Turn Instant Pot ON and press STEW/MEAT + 35 minutes. | |

When timer goes off, let steam release naturally. If you would like a thicker sauce, whisk in 1/4 teaspoon of xanthan gum with liquids before adding the beef. |
