Ingredients
- 1 tablespoon coconut oil
- 3 cloves garlic
- 13.5oz full fat coconut milk
- 2 teaspoons curry powder
- 3 teaspoons garam masala
- 1 Large lime (zest and juice reserved)
- 1/2 teaspoon chili paste
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 3 cups chicken bone broth
- 1lb boneless, skinless chicken thighs
- 16oz shirataki noodles
- 1 cup red pepper (thinly sliced) (** GARNISH **)
- 1/2 cup cilantro (** GARNISH **)

Turn Instant Pot ON and press MANUAL + 30 minutes. Add coconut oil and garlic to pot. Stir in remaining ingredients except chicken thighs. Stir until smooth. Adjust seasoning, spice, and salt to desired taste. Add chicken thighs. Replace lid, close, seal valve. When timer goes off, manually release pressure. Cut or shred chicken if desired. Stir in shirataki noodles. Garnish with cilantro and a squeeze of lime juice. |
