Perfect Keto Coconut Curry Lime Chicken Skillet

Ingredients

  • 1lb boneless, skin less chicken thighs or chicken breasts
  • 1 tablespoon avocado oil
  • 13.5oz coconut cream
  • 1 teaspoon sea salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 Large limes (zest and fresh lime juice reserved)
  • 2 cloves garlic
  • 2 teaspoons curry powder
  • 1/4 teaspoon red pepper flakes
  • 4-6 drops liquid stevia to taste

Directions

Step 1
Lightly season chicken with 1/2 teaspoon of salt and 1/4 teaspoon of salt. Set aside and preheat a cast iron pan or large skillet under medium-high heat. Add olive oil and sear chicken on both sides for approximately 2-3 minutes until golden brown.
Step 2
While chicken is browning, add coconut cream, remaining salt, pepper, garlic powder, onion powder, lime zest, lime juice, curry powder, 8-10 drops of liquid stevia (or 2 teaspoons of granulated stevia) and red pepper flakes. Adjust seasoning if needed to taste.
Step 3
Reduce heat and add coconut cream mixture. Cover and simmer for 10-15 minutes until liquid has reduced by 1/2. Garnish with green onions, sliced red peppers, and fresh cilantro if desired.
