Ingredients
- 1/4 cup olive oil
- 1 Large eggplant (thinly sliced)
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 teaspoon garlic powder
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/4 cup parmesan cheese

Preheat oven to 325 degrees. | |

Add 1/4 cup of extra virgin olive oil and the dried spices to a small bowl. Coat the sliced eggplant with the oil and spices. Arrange them on a baking tray. | |

Bake for about 30-40 minutes until the chips are evenly browned. Flip 1/2 through baking time. If browned, but not crisp at the end of the baking time, turn oven OFF and let them fully dry out in the cooling oven. Sprinkle on parmesan cheese if desired. Let cool completely to serve. |
