Ingredients
- 8 cups water
- 13.5oz canned tomatoes
- 3 teaspoons salt
- 4 cloves garlic
- 1/2 teaspoon pepper
- 1 whole chicken (3 lbs)
- 1 Medium sliced onion
- 3 stalks celery
- 1/2 cup baby carrots
- 4 cups zucchini noodles
- 1/2 cup basil
- 1/2 cup parmesan cheese

| Add water, salt, pepper, garlic cloves, and tomatoes to Instant Pot. Place chicken in pot. Add carrots, celery, and onion around chicken. Replace lid and press MANUAL +40 minutes. | |

| When timer goes off, release pressure manually. Remove chicken and shred meat. Add back to Instant Pot and stir in zucchini noodles. Portion and divide soup. Garnish with basil and parmesan cheese. | |
