Ingredients

  • 2 Large whole eggs
  • 2oz cream cheese (softened)
  • 1 scoop Perfect Keto 'vanilla' MCT oil powder
  • 1 teaspoon keto sweetener of choice
  • 1 tablespoon coconut flour
  • 1/4 teaspoon baking powder
  • 2 tablespoons wild blueberries
  • pinch salt

Directions

Step 1
Combine all ingredients except blueberries in a medium sized bowl. Whisk well until smooth. Stir in blueberries.
Step 2
Preheat skillet under medium-low heat and coat with non stick spray, butter, or ghee. Pour pancake batter onto hot skillet. Cook on both sides until golden brown, 2-3 minutes per side. Serve with keto maple syrup, coconut butter, or butter.
