Perfect Keto Pad Thai

Ingredients

  • 1/3 cup chicken stock or bone broth
  • 1 tablespoon fish sauce
  • 2 tablespoons soy sauce or coconut aminos
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon swerve, golden Lakanto, or keto friendly sweetener of choice
  • salt and pepper to taste
  • 1 teaspoon chili paste
  • 1 tablespoon coconut oil
  • 2 teaspoons finely minced garlic
  • 1 Large whole egg (cracked and whisked in a small bowl)
  • 2 cups keto friendly noodles (shiritaki, zucchini, spaghetti squash)
  • 2 Medium cooked chicken breasts
  • 1/2 cup peanuts
  • 1/2 cup cilantro (roughly chopped)

Directions

Step 1
Add sauce ingredients to a small jar or bowl. Shake or stir well until combined. Adjust seasoning to taste by adding salt, pepper, and/or more sweetener. Set aside.
Step 2
Add olive oil and garlic to a large pan set to medium heat. Cook for 30 seconds and then add keto friendly noodles and chopped chicken to pan along with sauce. Sauté for 1-2 minutes.
Step 3
Push noodles and chicken to one side and add mixed egg to pan. Cook for 1 minute until set and stir all ingredients together in pan. Remove from heat. Stir in chopped peanuts.
Step 4
Garnish with cilantro and serve.
