Ingredients
- 1/3 cup chicken stock or bone broth
- 1 tablespoon fish sauce
- 2 tablespoons soy sauce or coconut aminos
- 2 tablespoons apple cider vinegar
- 1 tablespoon swerve, golden Lakanto, or keto friendly sweetener of choice
- salt and pepper to taste
- 1 teaspoon chili paste
- 1 tablespoon coconut oil
- 2 teaspoons finely minced garlic
- 1 Large whole egg (cracked and whisked in a small bowl)
- 2 cups keto friendly noodles (shiritaki, zucchini, spaghetti squash)
- 2 Medium cooked chicken breasts
- 1/2 cup peanuts
- 1/2 cup cilantro (roughly chopped)
Directions

| Add sauce ingredients to a small jar or bowl. Shake or stir well until combined. Adjust seasoning to taste by adding salt, pepper, and/or more sweetener. Set aside. | |

| Add olive oil and garlic to a large pan set to medium heat. Cook for 30 seconds and then add keto friendly noodles and chopped chicken to pan along with sauce. Sauté for 1-2 minutes. | |

| Push noodles and chicken to one side and add mixed egg to pan. Cook for 1 minute until set and stir all ingredients together in pan. Remove from heat. Stir in chopped peanuts. | |

| Garnish with cilantro and serve. | |
