Ingredients

  • 3/4lb cooked/grilled shrimp (roughly chopped)
  • 3 Large avocados (sliced in half, seed removed)
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt
  • 1/4 cup cilantro (roughly chopped)
  • 3 tablespoons red onion (finely chopped)
  • 1/2 cup cucumbers (finely chopped)
  • 2 tablespoons jalapeño (finely minced)
  • 3 tablespoons lime juice

Optional

  • 3 tablespoons shrimp cocktail sauce

Directions

Step 1
Add lime juice, cilantro, red onion, jalapeño, cucumbers, and salt/pepper to a large bowl. Mix well. Adjust seasoning if needed. Add a pinch of cayenne pepper for heat if desired.
Step 2
Pour in chopped cooked shrimp and toss to combine. Fill avocado halves with shrimp mixture.
