Ingredients
- 1 tablespoon olive oil
- 1lb grass fed ground beef
- 1 Medium onion (finely chopped)
- 3/4 cups red bell pepper (roughly chopped)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 16oz can diced tomatoes
- 1 tablespoon chili lime seasoning mix
- 1 teaspoon cumin powder
- 1/2 teaspoon chili powder
- 4 cups bone broth or stock
Optional
- 1 cup cheddar cheese
- 4 tablespoons sour cream
- 1/4 cup green onions

Turn Instant Pot ON and set to SAUTE function +10 minutes. Pour in olive oil, add chopped onions and bell pepper. Season lightly with 1/2 teaspoon of salt and pinch of pepper. Sauté for 2-3 minutes. Add ground beef, break up meat, and stir. Cook for 2-3 minutes until beef is browned. Pour tomatoes, seasonings, salt/pepper, and stock. Stir well. | |

Turn OFF Instant Pot, then back ON. Press STEW/SOUP function + 20 minutes. | |

When timer goes off, manually release steam. Stir well. Serve with cheddar cheese,, sour cream, and green onions. |
