Perfect Keto Taco Soup

Ingredients

  • 1 tablespoon olive oil
  • 1lb grass fed ground beef
  • 1 Medium onion (finely chopped)
  • 3/4 cups red bell pepper (roughly chopped)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 16oz can diced tomatoes
  • 1 tablespoon chili lime seasoning mix
  • 1 teaspoon cumin powder
  • 1/2 teaspoon chili powder
  • 4 cups bone broth or stock

Optional

  • 1 cup cheddar cheese
  • 4 tablespoons sour cream
  • 1/4 cup green onions

Directions

Step 1
Turn Instant Pot ON and set to SAUTE function +10 minutes. Pour in olive oil, add chopped onions and bell pepper. Season lightly with 1/2 teaspoon of salt and pinch of pepper. Sauté for 2-3 minutes. Add ground beef, break up meat, and stir. Cook for 2-3 minutes until beef is browned. Pour tomatoes, seasonings, salt/pepper, and stock. Stir well.
Step 2
Turn OFF Instant Pot, then back ON. Press STEW/SOUP function + 20 minutes.
Step 3
When timer goes off, manually release steam. Stir well. Serve with cheddar cheese,, sour cream, and green onions.
