Pumpkin Cream Cheese Cookies

Ingredients

  • 2 cups Kodiak Power Cakes
  • 1/2 teaspoon pumpkin spice
  • 1/2 teaspoon cinnamon
  • 8oz softened cream cheese
  • 3/4 cups baking stevia or sweetener of choice
  • 1/4 cup Pumpkin Spice MuscleEgg egg whites
  • 1 teaspoon vanilla extract
  • 3 tablespoons coconut sugar
  • 3 tablespoons 'Pumpkin Spice' BuffBake peanut butter
  • 2 Chocolate Chip Detour 'Simple' Bars

Directions

Step 1
Preheat oven to 350 degrees and line a baking sheet with parchment paper or coat with non stick spray.
Step 2
Combine Kodiak cakes, pumpkin spice, and cinnamon in a medium sized bowl. Set aside.
Step 3
In the bowl of a stand mixer, whip softened (room temperature) cream cheese for 1 minute until smooth. Add egg whites, vanilla, stevia, coconut sugar, and nut butter. Mix on high for 1-2 minutes until light and fluffy.
Step 4
Slowly add dry ingredients to wet ingredients until well combined. Cut Detour bars into small chunks (similar to chocolate chip sized pieces) and stir into dough. Divide and drop cookies into baking sheet. Bake for 12-15 minutes.
