Ingredients

  • 1 1/2 cup Kodiak Cakes 'Power Cakes'
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 3/4 cups oat bran
  • 1/2 cup baking stevia or sweetener of choice
  • 1/2 teaspoon salt
  • 3/4 cups ground flax seed
  • 1 cup blueberries
  • 1/2 cup MuscleEgg 'Vanilla' egg whites
  • 3/4 cups milk of choice
  • 2 tablespoons melted coconut oil

Directions

Step 1
Preheat oven to 350 degrees and coat a muffin tin with non stick spray or use liners.
Step 2
Add all dry ingredients to a stand mixer or large bowl. Whisk to combine. Add remaining ingredients except blueberries. Mix on high until smooth and well combined. Stir in blueberries.
Step 3
Bake for 15-20 minutes until golden brown on edges and a toothpick comes out clean when poked through the center of each muffin.
