Ingredients

  • 1lb ground beef
  • 1/2 cup pork rinds (ground into a powder in a food processor)
  • 1/4 cup sugar free BBQ sauce (+ 3to 4 tablespoons)
  • 1 tablespoon tomato paste
  • 1 Large egg
  • 1 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon olive oil
  • 1lb radishes
  • 1 cup baby carrots

Directions

Step 1
Preheat oven to 400 degrees F. Add radishes, carrots, 1/2 teaspoon of salt, 1/4 teaspoon of pepper, and olive oil to a sheet pan. Toss to coat. Set aside.
Step 2
Add 1/4 cup BBQ sauce, 1/2 teaspoon of salt, 1/4 teaspoon of pepper, garlic powder, onion powder, tomato paste, and egg into a large bowl. Whisk to combine. Add ground beef and pork rinds to bowl. Mix well with your hands to combine.
Step 3
Portion and divide meat into small loaves. Arrange in between vegetables. Brush tops of meatloaves with extra BBQ sauce.
Step 4
Bake for 20-25 minutes until internal temperature on meat reaches 160 degrees F.
