Step 1

| Preheat oven to 400 degrees F. Add radishes, carrots, 1/2 teaspoon of salt, 1/4 teaspoon of pepper, and olive oil to a sheet pan. Toss to coat. Set aside. |

| Add 1/4 cup BBQ sauce, 1/2 teaspoon of salt, 1/4 teaspoon of pepper, garlic powder, onion powder, tomato paste, and egg into a large bowl. Whisk to combine. Add ground beef and pork rinds to bowl. Mix well with your hands to combine. |

Step 3

| Portion and divide meat into small loaves. Arrange in between vegetables. Brush tops of meatloaves with extra BBQ sauce. |

| Bake for 20-25 minutes until internal temperature on meat reaches 160 degrees F. |
