Ingredients
- 1lb flank steak
- 1 cup fresh parsley
- 1 cup fresh cilantro
- 4 cloves garlic
- 1/4 cup olive oil (+ 1 tablespoons)
- 1/4 cup red onion
- 1/4 cup red wine vinegar
- 1/4 cup lime juice
- 1/4 teaspoon red pepper flakes
- 1 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 3 cups broccoli florets
- 1 cup cherry tomatoes
Directions

| Preheat oven to 450?F. Add parsley, cilantro, garlic, red wine vinegar, lime juice, red onion, red pepper flakes, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper into a large food processor. Blend on high while slowly pouring in 1/4 cup of olive oil. Taste and adjust seasoning/spice if needed. Set aside. | |

| Add broccoli and cherry tomatoes to a sheet pan and toss with 1 tablespoon of olive oil and 1/4 teaspoon of salt. Move to perimeter of pan. Place flank steak int he center of the sheet pan. Season with 1/2 teaspoon of salt and 1/4 teaspoon of pepper. | |

| Bake for 12-15 minutes (will depend on the thickness of your steak) until medium well. Internal thermometer should be about 140 for medium rare to 150 for medium. Turn oven to BROIL and bake for another 2-3 minutes. | |

| Remove from oven and let rest at least 10 minutes and cut against the grain when slicing. Add chimmichuri sauce to serve. | |
