Strawberry Orange Pudding Cake

Ingredients

  • 1/4 cup almond flour
  • 3 tablespoons coconut flour
  • 1/2 cup flax meal
  • 1 teaspoon baking powder
  • 1 tablespoon orange zest
  • 8 drops food grade orange essential oil
  • 2 Large whole eggs
  • 1 cup 'Strawberry' Zevia Soda
  • 1 cup milk of choice
  • 1/4 cup stevia or sweetener of choice
  • 1/2 cup roughly chopped strawberries
  • 1/4 teaspoon cream of tartar

Directions

Step 1
Preheat oven to 350 degrees F and coat a small loaf pan with non stick spray or butter/ghee.
Step 2
Separate eggs, adding whites to a large bowl or stand mixer. Beat egg whites with cream of tartar for 2-3 minutes until stiff peaks form. Set aside.
Step 3
In a large bowl, add egg yolks and all other ingredients (EXCEPT fresh strawberries). Mix well until combined.
Step 4
Slowly fold egg whites into batter. Stir in fresh strawberries. Add to prepared pan and bake for 50-55 minutes until golden brown.
