Step 1

| Preheat oven to 350 degrees F and coat a small loaf pan with non stick spray or butter/ghee. |

| Separate eggs, adding whites to a large bowl or stand mixer. Beat egg whites with cream of tartar for 2-3 minutes until stiff peaks form. Set aside. |

| In a large bowl, add egg yolks and all other ingredients (EXCEPT fresh strawberries). Mix well until combined. |
Step 4

| Slowly fold egg whites into batter. Stir in fresh strawberries. Add to prepared pan and bake for 50-55 minutes until golden brown. |
