Strawberry Shortbread Cookies

Ingredients

  • 4 tablespoons butter (cold)
  • 5 tablespoons sugar
  • 1 Large whole egg
  • 1 cup Kodiak Cakes All Purpose Baking Mix
  • 1 teaspoon baking powder
  • pinch salt
  • 1 cup whipped cream
  • 1 cup sliced strawberries

Directions

Step 1
Preheat oven to 425 degrees and line a large baking sheet with parchment paper.
Step 2
Cream butter and sugar together in a large bowl or stand mixer. Mix on high until light and fluffy. Add egg. Slowly add dry mixture to wet mixture in small batches until dough forms.
Step 3
Divide dough into four portions; pat each into a 3/4-in.-thick circle. Place 2 in. apart on a parchment paper-lined baking sheet. Bake 9-10 minutes or until golden brown.
Step 4
Bake for 16-18 minutes until pale golden brown in color.
