Ingredients
- 2 Medium zucchinis (grated)
- 1 Large whole egg
- 3 cups spinach
- 2 tablespoons fresh dill (finely chopped)
- 2 cloves garlic (finely minced)
- 1/4 cup fresh parsley (finely chopped)
- 1/3 cup almond flour
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons olive oil
- 1/2 cup feta cheese (crumbled)

Add grated zucchinis to a kitchen towel and wring out water. | |

Add zucchini and all remaining ingredients to a large bowl. Mix well with a spoon until well incorporated. | |

Heat skillet under medium heat. Add oil. Scoop mixture, form into patties, and fry for 3-4 minutes per side until golden brown. Finish with a sprinkle of course salt. |
