Zucchini, Spinach, and Feta Fritters

Ingredients

  • 2 Medium zucchinis (grated)
  • 1 Large whole egg
  • 3 cups spinach
  • 2 tablespoons fresh dill (finely chopped)
  • 2 cloves garlic (finely minced)
  • 1/4 cup fresh parsley (finely chopped)
  • 1/3 cup almond flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons olive oil
  • 1/2 cup feta cheese (crumbled)

Directions

Step 1
Add grated zucchinis to a kitchen towel and wring out water.
Step 2
Add zucchini and all remaining ingredients to a large bowl. Mix well with a spoon until well incorporated.
Step 3
Heat skillet under medium heat. Add oil. Scoop mixture, form into patties, and fry for 3-4 minutes per side until golden brown. Finish with a sprinkle of course salt.
