“Save time in the mornings and stay on track with this easy, healthy, protein packed make ahead Snickerdoodle protein French toast”!
Summer vacation is in full swing around here, but that doesn’t mean food & meal prep have fallen by the wayside! During the school year, having my daughters breakfasts readily available in the morning was invaluable to me. I was given a few extra minutes each day to sleep, there was no annoying “What can I have for breakfast?” conversations, and most importantly I knew I was sending my daughter off to school with a full healthy belly. With summer upon us and the morning routine turned upside down, I’ve decided to continue on with breakfast prep simply because it still provides me with a zero stress (or activity) when starting our days!
When I asked my daughter last week what she wanted me to prep for her, she requested one of her (and my) all time favorites: French Toast! No problem there at all my beautiful girl!!! Whether you are making a single serving of French Toast or 10 servings, you can EASILY have this all prepped in under 10-15 minutes!
Not too shabby huh? I simply threw the handful of ingredients for the batter in a blender (egg, egg whites, milk, vanilla, protein powder, cinnamon, nutmeg) then soaked the bread for a couple of minutes in a shallow baking dish. Sausages were browned and I already happened to have some pre cut fruit on hand… simple enough right? Then I preheated our skillet pan and cooked off the French Toast in one big batch! Another 5 days of HEALTHY make ahead breakfasts done!
Personally, I don’t think our family will ever have French Toast without the addition of protein powder. Not only does it provide for a more balanced nutritional profile, but it also gives an overwhelming amount of DELICIOUS flavor! For this batch I used my go to PEScience ‘Snickerdoodle’ protein which is perfectly fine for any age, but I could have also used my daughters KidzShake ‘vanilla’ protein (just add more cinnamon and a little sweetener of choice to the egg mixture)!

Once you let the French Toast cool a bit, slice & divide them up, store, and prepare to enjoy stress free EASY mornings!!! To reheat this breakfast, my daughter or I can throw the French Toast slices in the toaster, microwave the sausages, and place them both back into the containers. Then my daughter can slice it up, add her maple syrup, and eat in under 2 minutes while I catch extra ZZZ’s or rest on the couch!
And since I know I will be asked about the storage containers, the 3 compartment ones I use are no longer available, but these will work just as good:
I like having the extra compartments to make good breakfasts (or lunch or dinners) even better! Added protein, some fruit, maybe some yogurt & granola, veggies, favorite snacks, or anything else your can think of. More space= more food and thats always A-OK in my book 🙂
Snickerdoodle Protein French Toast

Ingredients
- 1 1/2 cup 'Vanilla' MuscleEgg egg whites
- 1 Large whole egg
- 1 teaspoon vanilla extract
- 1/4 cup milk of choice
- 1 scoop Snickerdoodle PEScience protein (30% Off coupon below)
- 2 teaspoons cinnamon
- 1/4 teaspoon nutmeg
- 8 thick slices bread of choice
Directions
Step 1 | |
Mix egg whites, egg, vanilla, milk, cinnamon, and protein in a bowl or blender. Beat until smooth and combined. Pour into a shallow dish and soak bread for 2-3 minutes. | |

Preheat skillet or large pan and coat with non stick spray, butter, or coconut oil. | |
Step 3 | |
Cook French toast 3-4 minutes per side until golden brown. |
