Bacon Cheddar Biscuits

These low carb bacon cheddar biscuits are loaded with flavor, easy to prepare, and come together in about 15 minutes!  Biscuits are comfort food at its finest and the perfect addition to any meal.

Today I am sharing one of my favorite go-to biscuit recipes. They are always a hit in our home and SO easy to prepare.   No roll, no fuss low carb biscuits from scratch, perfection every time.  Skip the food processor, rolling pin, pastry cutter, and biscuit cutter with this easy low carb, keto, and paleo friendly biscuit recipe!

Truth be told, I did not always love bacon.  Back in my low fat days, I was actually a turkey bacon kind of girl.  Don’t get me wrong though.  I LOVED the taste of bacon, however I just didn’t love the thought of the extra fat that came along with it.  However, once I started a higher fat diet going keto/paleo, a whole new world opened up to me.  A world that included BACON!

Therefore where do we start with this simple drop biscuit recipe?  Bacon of course!  Once you get the bacon crispy and those onions softened, you really just dump all of the ingredients into a bowl.

The other main star in these tasty biscuits though is the cheese.  Feel free to use any type of cheese you prefer.  I usually make 2 batches of this recipe at a time: one for my husband and I, then one for my daughter who keeps a dairy free diet.  For our batch I use white shredded sharp cheddar cheese and for her biscuits I use Trader Joe’s shredded almond cheese.  You could also use nutritional yeast in place OR in combination with for an extra cheesy flavor.

When the dough comes together, simply scoop it out with a small measuring spoon and “drop” it on your baking sheet. One of the reasons why I prefer these drop biscuits over traditional ones is simply because of the texture.  The tops get golden brown and have a slight crunch to them, while the inside is moist and tender.  Of course the flavor explosion does not hurt either though.

You could leave the biscuits here and bake them off, but why not add even more flavor?  Sprinkle on extra cheese or nutritional yeast.  The majority of the population is totally sleeping on nutritional yeast friends.  It has SO much flavor and is jam packed with nutrients.

Nutritional Yeast Benefits:

  • Vitamins– get an extra boost of energy with a big dose of vitamin B-12
  • Protein- nutritional yeast is actually a “complete protein” and contains all nine essential amino acids
  • Trace Minerals- contains things like zinc, selenium, manganese molybdenum, magnesium, phosphorus, and potassium (all essential for good health)
  • Antioxidants- contains glutathione which helps protect cells and eliminate toxins from the body
  • Heart Healthy- contains beta-glucans which can help lower blood cholesterol and triglyceride levels

So even if you do have dairy in your diet, do not sleep on nutritional yeast.  If you haven’t had it before, give it a go.  You will probably be surprised at the big punch of “cheesy” flavor you get!

Back to my baked biscuits though…

See.  Golden brown and perfect.  These are best fresh out of the oven, but also amazing reheated.  However, don’t you dare think about popping them into the microwave and skip reheating in the oven.  My favorite way to enjoy these as leftovers is slicing them and then reheating in the toaster!

Oh my heaven.

As an addition to any meal, a great snack, or use them in a sandwich.  The bottom line is just make these biscuits!  This is the answer to your low carb craving for anything that resembles bread.  The bonus here is all of that extra easy flavor that comes along with these bacon cheddar biscuits!!!

Bacon Cheddar Biscuits

Ingredients

  • 2 thick slices bacon
  • 1/4 cup onion
  • 1 cup almond flour
  • 2 tablespoons coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1/2 cup shredded cheddar cheese or replace with 1/4 cup nutritional yeast if dairy free/paleo
  • 1 large whole egg
  • OPTIONAL:
  • 2 tablespoons fresh chives (finely cut)

Instructions

Preheat a skillet under medium fire and add bacon and onions to the pan. Cook until bacon is crispy and onions have caramelized. Let cool. Keep in bacon grease.

Preheat oven to 375 degrees and line a baking sheet with parchment paper.

In a large bowl, combine all remaining biscuit ingredients in a large bowl and mix with a wooden spoon until batter is well incorporated. Stir in cooled bacon/onion mixture and optional fresh chives if desired.

Scoop and drop dough onto prepared pan. Bake for 12-15 minutes until tops are slightly golden brown.

Add melted butter to the top of each biscuit to serve.
