Keto Tabouleh
Ingredients
- 2 bunches parsley
- 1 cup cauliflower
- 1/3 cup hemp hearts
- 1 Large lemon zest (zested & juiced)
- 1 tablespoon finely minced garlic
- 1 Medium cucumber (chopped)
- 1 Small red onion (chopped)
- 1 Small tomato (chopped)
- 1 teaspoon salt
- 1/2 teaspoon pepper

Step 1 | |
Add parsley and cauliflower to a large food processor. Blend for 30-45 seconds, just until you have a course crumble. Add contents to a large bowl. | |

Add zest and juice of one lemon, cucumber, garlic, red onion, tomato, salt, and pepper. Mix until all ingredients are well incorporated. |
