Keto Tabouleh

Ingredients

  • 2 bunches parsley
  • 1 cup cauliflower
  • 1/3 cup hemp hearts
  • 1 Large lemon zest (zested & juiced)
  • 1 tablespoon finely minced garlic
  • 1 Medium cucumber (chopped)
  • 1 Small red onion (chopped)
  • 1 Small tomato (chopped)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Directions

Step 1
Add parsley and cauliflower to a large food processor. Blend for 30-45 seconds, just until you have a course crumble. Add contents to a large bowl.
Step 2
Add zest and juice of one lemon, cucumber, garlic, red onion, tomato, salt, and pepper. Mix until all ingredients are well incorporated.
