One Sheet Italian Lemon Salmon and Veggie Bake

Ingredients

  • 4 pieces salmon
  • 1 cup radishes (sliced in half)
  • 1lb asparagus
  • 1 tablespoon olive oil
  • 1 Large lemon (zested & juiced)
  • 1 tablespoon garlic (chopped)
  • 1 teaspoon salt
  • 1/4 teaspoon lemon pepper
  • 2 tablespoons Italian herb seasonings mix

Directions

Step 1
Preheat oven to 400 degrees and line a baking sheet with parchment paper.
Step 2
Add salmon and veggies to pan and coat with olive oil. Sprinkle on lemon zest and seasonings.
Step 3
Roast in the oven for 15-18 minutes. Please note this method will give you crispier vegetables. You can also cook vegetables slightly for 10 minutes first and then add salmon for remaining cooking time to make them more tender.
