Quick & Easy Pesto

Ingredients

  • 3 tablespoons toasted pine nuts
  • 60g basil
  • 25g arugula
  • 2 tablespoons garlic
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon lemon zest
  • 3 tablespoons lemon juice
  • 3 tablespoons reduced fat parmesan cheese
  • 4-5 tablespoons water

Directions

Step 1
In a small food processor, combine pine nuts, basil, arugula, garlic, olive oil, lemon zest, lemon juice, and parmesan cheese. Blend until smooth and add water according to how thick/thin you want your sauce. Add salt and pepper to taste.
