Hot Cocoa Snickerdoodle Cookies

During my “clean eating” days, one of the very first baked treats I ever made was a double chocolate chip cookie made entirely of all things good and healthy for you.  The base recipe was already pretty perfect & delicious if you ask me, but I figured I would revisit it and see what I could do to jazz it up and make it extra fun!   Now that I’m a much more flexible eater compared to back then (I no longer ban ANY foods or food groups from my diet), there are SO many more ingredients I can incorporate here and there or wherever I choose simply because I want to.  Remember, mainly nutrient dense and “healthy” WITH a touch of fun… keeps life, dieting, and eating much more pleasurable AND sustainable!!!  No need to ban everything that once made your heart and tummy happy right?  80/20 or 85/15 or 90/10… I’m even be happy with 95/5 in my life.

Anyways, one of those off limit foods I had for myself back in the day was marshmallows!  I mean all that sugar and all those carbs?  Surely I can’t put those in my body without some kind of fear (gaining weight, feeding a sugar addiction, GMO’s, being processed, etc. etc. etc. blah blah blah).  Well, I couldn’t back then, but now?  Please hand over the marshmallows… and the chocolate… and all of the food please!  I will take all of it (in moderation of course) and enjoy it!  Chocolate and marshmallows always go brilliantly together, why not in a cookie as well?  Also, as an ode to my nephew who got me hooked on cinnamon in my hot cocoa, a little hint of spice would blend right in!

And thus, my “Hot Chocolate Snickerdoodles” were born…

I could have stopped with just adding a few marshmallows on top or in the cookie dough, but an extra dose of chocolate was calling my name… this Emmy’s chocolate sauce is SO rich an decadent (and FYI… it’s vegan, raw, gluten free, and contains only FOUR ingredients)!  Addictive and perfect….

A few marshmallows, chocolate sauce, a little sprinkle of cinnamon and a dusting of cacao powder?  It’s magical.

Hot Cocoa Snickerdoodles

Serves 12

Cook time 15 minutes

Ingredients

  • 1/4 cup Kodiak Brownie Mix (Kodiak)
  • 1/2 cup coconut flour
  • 2 tablespoons PEScience Snickerdoodle protein (can omit and add an additional 2 tbsp Kodiak instead if desired)
  • 1/4 cup cacao powder
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup milk of choice
  • 2 tablespoons softened butter or coconut oil
  • 1/4 cup Chocolate MuscleEgg egg whites
  • 1/2 teaspoon vanilla extract
  • 60 drops Double Chocolate Sweet Leaf Stevia Drops (or 2 tbsp sweetener of choice)
  • 2 tablespoons Enjoy Life mini chocolate chips (** TOPPING **)

Optional

  • 2 tablespoons mini marshmallows or vegan marshmallows (** TOPPING **)
  • 2 tablespoons Emmy's chocolate sauce (** TOPPING **)

Directions

Step 1
Preheat oven to 375 degrees and line a cookie sheet with a silpat or coat with non stick spray.
Step 2
Combine all cookie ingredients in a large bowl (everything except chocolate chips, marshmallows, and chocolate sauce). Mix until smooth and everything is well incorporated.
Step 3
Divide dough into 12 cookies and place on your cookie sheet. Add a few chocolate chips to the tops of each cookie. Press dough down evenly.
Step 4
Bake for 14-16 minutes until set.
Step 5
Remove from oven and let cool for 10-15 minutes then add marshmallow, drizzle with chocolate sauce, and sprinkle with cinnamon.

NUTRITIONAL INFORMATION (makes 12 cookies): calories- 87, fat- 4 grams, carbs- 10 grams, protein- 4 grams (per cookie without chocolate sauce)
