Keto Waffles/Pancakes
Ingredients
- 5 tablespoons chia seeds (ground)
- 3 tablespoons flax meal
- 3 tablespoons coconut flour
- 2 tablespoons Lakanto or sweetener of choice
- 2 tablespoons melted butter
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1 cup milk of choice

Add all ingredients to a large bowl or stand mixer. Mix on high until smooth and well combined. | |

Preheat waffle maker and coat with non stick spray, butter, or coconut oil. Pour in batter and cook for 2 cycles until waffle is browned and cooked through. For pancakes, cook 2-3 minutes per side. | |

If batter becomes too thick while making waffles, add more milk 1-2 tablespoons at a time. |
